June 6 is National Applesauce Cake Day! My mom used to make applesauce cake every once in a while. It’s very moist. Using applesauce in a recipe is a good way to cut down on the amount of fat. Here’s a recipe for you to try out:
Ingredients:
- 2 1/2 cups all purpose flour
- 1 cup sugar
- 1/4 tsp baking powder
- 1 1/2 tsp baking soda
- 1 1/2 tsp salt
- 3/4 tsp cinnamon
- 1/2 tsp ground cloves
- 1/2 tsp allspice
- 1/2 cup softened shortening
- 1/2 cup water
- 16 oz jar of applesauce
- 1 large egg
- 1/2 cup nuts, chopped
- 1 cup raisins
Method:
- Mix together all the dry ingredients.
- Mix in wet ingredients and beat for 2 to 4 minutes.
- Mix in raisins and nuts.
- Pour batter into greased and floured 9×12 inch pan and bake at 350 degrees for 45 minutes.
Best served the next day.
